This
article talks about French restaurants serving factory-frozen food.
A recent
survey shows that a third of French restaurants serve frozen food to their
clients and both tourists and French consumers are very disappointed.
The main
problem is that people are ready to pay a lot for French cuisine, well known
around the world. But in a lot of restaurants, the reality is disappointing.
For Consumers Unions, Travel Operators and tourists it's a scandal. Otherwise,
the UNESCO declared French meal part of the world patrimony.
The article
tries to analyze the problem to understand better why French restaurants'
owners use factory-frozen food instead of cooking their own meals. The answer
is pretty simple: to maximize profits. Mainly because chefs and assistants
salaries are quite expensive and using frozen food avoid such expenses.
For famous
French chefs, Consumers Union and others, French restaurants have to stop
"fooling consumers". The government introduced some proposals to
avoid these kinds of practices. The minister responsible for artisanship,
commerce and tourism, proposes to affix a "home-made" logo on the
menus when restaurants are not serving frozen food.
The main
objective is to inform potential consumers about the actual food serving by the
restaurant.
Because
actually, people are ready to pay less for frozen food and more for high
quality food but they want to have the choice and the possibility compare restaurants
with all the information. They ought to know what they have in their plate.
This
"home-made" logo is the first step to a real legislation concerning
the control of the origin and the quality of the food serving in French
restaurants.

I'm shocked by this way of doing ! I knew it, but I didn't think that so much restaurants use it... That kills the cook's art. It's a shame in a country so prides on the quality of its food. Astrid.
